Oatmeal Brownies

HEEEEY. It's been ageeees, right? Maybe a decade. Mkaaay, just kidding, sounding like a total lame person here :)) Anyway. So hi! I'm back to cooking again! Or baking. Uhm well because I have a problem that I face everyday since summer started and classes ended: BOREDOM. And not just boredom, ENDLESS BOREDOM! Whoooo, hail to all bored peeps out there :| :)

Anywaaaaay. I suck. I gained weight--well I think so (and still hoping that I didn't, really). Well, it is sooo freaking depressing :| But what can I do? I like being around food. Not that I love to eat all the time but whenever I have free time, all I think about is about baking and just randomly whip up some healthy recipes in my head. Maybe I am addicted to food :| CRAP. Yeah, maybe I am. And it's the worst thing if you're trying to lose some bulges around your boddeeh.

Moving oooooon. I love baking and it's good news that my baby brother loves those goody-goodies that I bake so I have enough reason not to eat them. Teehee! Sooo, here's a brownie recipe! Modified to a healthy version by meee <3 HIHIHIHI have fun baking! Mwah.

Oatmeal Brownies

6 tablespoons canola oil

8 tablespoons cocoa powder

12 tablespoons sugar

1 tablespoon milk

½ teaspoon baking powder

1 egg

9 tablespoons oat flour

1 teaspoon vanilla

¼ teaspoon sal

¼ teaspoon coffee powder

Combine oil, coffee powder, and cocoa powder. Stir well.

Add sugar. Stir.

Stir in egg, vanilla, and milk.

Add oat flour.

Mix until everything is fully incorporated.

Bake in 350 oven for 25 minutes or depending on your taste preference:

1. Fudgy Brownies- Bake only until a wooden toothpick inserted about one inch from side of pan comes out with a moist crumb. The center of the brownie will often seem unbaked but it will be firm upon cooling.

2. Extra Fudgy – Cool the brownie for only 15 minutes then cover it with aluminum foil and refrigerate.

3. Chewy brownie- Bake until wooden toothpick inserted in the center comes out clean.

HELL YEAH EASY RIGHT? \m/ Kaboom!

Addicted to Apple and Cinnamon

Because of random experiment, I found a new recipe [is this considered a recipe? But anyway] to love everyday. My long lost love. HUH? =))))))))))))

So how did I came to such experiment? Well, since there's a huge box of Special K on the kitchen table waiting for me, I tried really hard to think of a way of eating cereals without milk but isn't too dry to be eating with a spoon. Well, trying to watch calories hihihihi. Here it is:

Ingredients:
1 cup Special K original cereal - 120 cal
1 apple - 80 cal
1 pack Splenda - 0 cal
Cinnamon

How-to:
1.) Chop apple into cubes. Sprinkle with splenda and cinnamon.
2.) Add in half of the cereal.
3.) Pop in the microwave for 1 minute at high.
4.) Mix to incorporate ingredients very nicely.
5.) Place it back into the microwave and set for another 20 seconds.
6.) Get your yummy cinnamony treat. Add the remaining cereal. Mix. VOILA!

That's it! With only 200 calories, you already have a chewy, sticky, with-a-little-crunch, cinnamony, fruity, and of course a super duper healthy cereal treat! GOODNESS.

Hunger pangs, ATTACK!

OKAAAY. Since it's a holiday today, boredom wrecked my healthy diet :| Guess what I ate? A BURGER. DANG! :| But at least, it's a grilled one :D

I had one baby brothers burger from Brothers Burger and it is oh-soooo-good. RRR. At first I was so guilty eating it but then I realized, I'm young and STILL free from any kind of disease so it's fine to indulge in once in a while! And not crave for it when I'm already walking with three feet [gets?]

Also had Frutti Froyo and a couple of my super healthy banana cinnamon oatmeal cookies :> HIHIHI.

RRR. Back to dieting tomorrow! FIGHT >:|

Flourless-butterless Choco Cookies

Recently being over-addicted [if there's such word] to baking cookiiiesss, I found myself hacking the internet for flourless AND butterless cookies :) I love cookies and why not love them even more if you know they won't add numbers to your waistline? [Well, in moderation, still:(]

Anywaaay, so after hours of Google-ing and after having baked some super-healthy-good-for-the-heart-cookies, I found another cookie recipe without using butter and flour :D

[Too bad I couldn't make some of this just yet :( Me needs to go to the grocery first :))]


Here's the recipe :)

Recipe from Oprah.com plus some "modifications" by me

Ingredients

¾ cup Hershey's cocoa powder - 120 cal

½ and 1 tbsp honey – 520 cal

½ cups unpacked brown sugar – 225 cal

1 tsp salt – 0 cal

1 cup sliced almonds – 550 cal

1 tbsp vanilla – 40

4 egg whites – 60 cal

Total no. of calories: 1,515 [HMMM… it’s quite a number, eh?]

1.) Place the dry ingredients in a bowl and mix until “everyone” is nicely incorporated.

2.) In another bowl, combine vanilla and egg whites. Mix it very well. Add honey, mix.

3.) Combine dry and wet ingredients. Mix mix mix. Chill dough.

4.) Prepare you baking trays, slightly greased with 0 cal cooking spray.

5.) Turn up the heat in your oven at 300

6.) Scoop cookie dough in your tray [size? Depends on your appetite hihihi]

7.) Bake until you notice some cracks in the surface of your cookies.

8.) Take them out and start taming your hunger pangs! [but you might wanna limit it L Oh maaaan]


Okay! Since it has quite a sum of calories, it’s best to make 30 cookies out of this recipe. By this, you can have 2 cookies for only 100 calories! :D

Super Healthy Banana Cinnamon Oatmeal Cookies

Just made some of these yummy bites today and they're best eaten after getting out of the oven . HEAAVVEENN!!

No butter, no sugar, no flour, just wholesome cookies. HMMMM :P~

Ingredients

3 ripe bananas – 300 cal

2 cups oatmeal – 300 cal

¼ cup skim milk – 125 cal

1 egg – 80 cal

½ tsp vanilla – 5 cal

1 ½ tablespoons honey – 90 cal

2 teaspoons cinnamon – 15 cal

¼ cup dark choco chips (instead of cinnamon)

Total calories: 915 calories (no choco chips)

1.) Mash ripe bananas with milk.

2.) Mix in egg, vanilla, and honey.

3.) Add oat flour and cinnamon

4.) Chill the dough in the freezer for half an hour

5.) Slightly grease a cookie tray with olive oil spray

6.) Scoop spoonfuls of the dough in the tray and start baking!

Oven temperature at 180 c.

Take out your cookies a little undercooked if you want them to be chewy. Cook them a little longer for a crispier bite.

Ideal number of cookies: 25 cookies

With only 40 calories for each cookie that you and your heart will love, talk about YUM!

Microwave Cinnamon French Toast

Zero egg, flour, and sugar brunch you’ll love J

Ingredients:

1 ripe banana – 100 cal

A dash of cinnamon – 5 cal (or more if you love this spice)

2 slices whole wheat bread – 160 cal

1 sachet splenda – 0 cal (optional)

Slices of fruits (optional, for toppings)

Total calories: 265 cal (without fruit toppings)

1.) Add A LITTLE water in your banana and mash it with a fork or a blender. Mash it until it begins to have a runny consistency (a consistency that isn’t like that of water but thinner than that of honey). Add more water if needed.

2.) Mix in cinnamon and splenda into your mashed banana. Set aside.

3.) Meanwhile, toast whole wheat bread in an oven toaster just until it starts to brown a little. [nicely toasted]

4.) Dip the toasted bread into the banana mixture. Coat it very nicely.

5.) Microwave for about a minute of less.

6.) Top with desired fruit.

VOILA! YUMMY, indeed J Though this is ideal for breakfast or brunch, I love to eat this anytime of the day HAHA.

What's this all about? HMMMM

So hey! I'm a 16-year-old college student, turning 17 April of next year, and I have two obsessions--two of which are very opposite like heaven and hell [well, for me] :|

Being a former overweight child, I've come to an obsession of being a super health conscious teenager [counting calories here and there]. I keep a food diary and keep track of my total calorie intake everyday. OOHHH, kinda creepy for a teenager right? But anyway, I also have this one obsession that's very far from being a health nut. I am one of those "unlucky" creatures who has a sweet tooth. I LOVE BAKING SWEET STUFF. I also like cooking, by the way :) I'M A FOODIE. How ironic is that? Like I'd spend an hour in google-ing for stuff about healthy-living and another hour searching for recipes to bake or make. Kinda ridiculous right? Well, THAT'S ME! And it's a weird me, I know =))

But who cares? So here's the thing: Since I can cook, why not use this skill of mine to make things a lot more fun for me and stay healthy? OOOHHH [light bulb above head!!!]

Sooo, what would this blog include? Well, just healthy versions of the recipes we all love ♥ Some I may get in the net, some may be from my own head :D Hmmm. I just hope things would turn out great and the "future" recipes would turn out YUMMY!
